Mish Saçi:
Slow-roasted meat under the saç is the pinnacle of Lazarati hospitality. This ancient cooking method involves roasting lamb or kid slowly beneath a metal lid. The lid is covered in hot embers and ash. It produces a tenderness and flavor that modern ovens can’t replicate. In Lazarat, the saç is more than a tool.
